Anzac Biscuits

As we take time to remember those who served their country this Anzac Day we look at the origins of the much loved Soldiers’ Biscuits. Renamed, Anzac Biscuits, after the landing at Gallipoli, they were a hearty biscuit made by women on the home-front and transported to battlefields as part of care packages. Based on a Scottish recipe using rolled oats, the ingredients were carefully selected to ensure the highest level of nutrition as well as shelf life for the long journey, in excess of two months. Today, Anzac Biscuits are protected by the legislation and can only be sold commercially if they conform to the traditional recipe and shape.  They are often used for fund raising activities to support returned servicemen.
